Personnel hygiene station in the bakery industry

The Mohn GmbH has planned and implemented personnel hygiene stations for Austria’s market-leading bakery producer with roughly 600 employees at their company headquarters.

The company’s product range comprises roughly 130 products, thereof 30 seasonal products. Total sales were roughly 217 million euro in 2020.

Task

Personnel hygiene stations shall be installed in various access areas to 2 different baking lines of the company. In the sense of quality management, greatest importance was attached to as perfect as possible a hygiene and the greatest possible safety on the part of the customer.

Project description and special features

The initial situation in one access area toward the production of one baking line was on the part of the building site, that coming from the direction of social rooms and changing rooms, automatic hand soaping should be carried out in the area of the entrance corridor after a door passage and a handrail gate should be considered which is used both by the cleaning personnel and should automatically release the escape route in case of emergency.

Whereas in front of the passage of the other personnel hygiene station - before the access to the 2nd baking line - the initial situation was different. Due to the narrow corridor, another concept for the escape route was required.

Moreover, it should be considered that a hand washing facility and hand drying unit were already existing on the part of the building site and had to be integrated into the concept.

  • In the passage direction toward production, the implemented concept provided that the employees had to initially pass the personnel hygiene station planned in the room through an entrance turnstile controlled by a forced sequence with an automatic 2-hand soap dispenser (type Soap-Control SL Highline).
  • After the employees have subsequently cleaned and dried their hands, they cross a compact hygiene station with an integrated 2-hand  disinfection unit and walk-through sole cleaning type Clean-Check 1500 Highline which ist positioned in passage direction from right to left.
  • At the hygiene station it is ensured that employees get to the production only with disinfected hands as well as cleaned and disinfected shoe soles. The functionality of the 2-hand automatic disinfection unit with integrated electrical turnstile will - analogue to the 2-hand soap dispensers - only release in the direction of production if both hands have been recorded by the outwit-safe sensors and wetted with soap by the full cone beams.

In the lower area of the hygiene station of type Clean-Check 1500 R Highline, the soles of employees are simultaneously cleaned and disinfected by means of rotating brush rollers.
  • The way back from production towards the social/changing rooms or toilets in case of breaks or shift ends also takes place via the compact hygiene station of type Clean-Check 1500 R Highline. However, the electrical turnstile has to be released here by means of a button for the way back.

The walk-through sole cleaning machine serves to avoid extensive dirt trailing into the social/changing rooms or toilet areas.
  • As mentioned, the personnel hygiene station of the 2nd baking line was equipped on our part with the special feature of a particular 3-arm turnstile with a view to the escape route conception. In case of a lacking electrical impulse, the upper lock arm moves downward away and thus releases the passage in case of emergency.

Opposite to the drop-arm turnstile, an electro-magnetically operated wing gate was considered, because the combination enables the implementation of escape routes also in this narrow corridor. The electro-magnetic wing gate as well as the drop-arm turnstile were here coupled via the internal fire alarm system.
  • Special features of these personnel hygiene stations have been the consideration of electro-magnetically operated handrail gates for the cleaning personnel at the automatic hand soap dispenser facility with turnstile as well as the compact hygiene station with hand disinfection and sole cleaning.

The real highlight of these electro-magnet handrail gates is that they automatically open in case of emergency, because they are coupled via the fire alarm system.
Furthermore, document trays were provided on the turnstile passages for an easier handling of important quality assurance documents and for senior executives.
