Smoke house trolleys for delicious sausage specialties
Meemken in the Oldenburg Münsterland region in Germany has stood for delicious sausage specialities for more than 80 years, which has been processing exclusively beef and poultry meat according to halal specifications at its headquarters since 2009.
Mohn GmbH has designed and supplied stainless steel smoking trolleys for 1,600 mm long sucuk sticks and salami sausage products at the production site in Gehlenberg (Friesoythe), Germany.
Task
When Meemken invested in new combined smoking and maturing chambers for raw sausage production in 2020, this called on leading smoke trolley specialist Mohn GmbH with more than 20 years of experience to design and supply the stainless steel smoke trolleys according to the customer's specifications and wishes.
The smoke trolleys had to be considered above all from the point of view of actual requirements. The suitability of the trolleys and their integration into the overall hygiene concept of the plant also had to be taken into account.
The main focus was on equipping the corresponding smoking and maturing chambers from a well-known manufacturer. The available space was to be used optimally, but the quality of the smoking and maturing process was not to be negatively influenced by the smoking trolleys.
In terms of quality management, value was also placed on clean, perfectly pickled weld seams and a robust frame profile construction made of stainless steel of quality 1.4301/ AISI 304 - due to the Halal specifications.

Project description and special features
The constructional conditions were clarified on site by an expert employee of the Mohn company. After taking into account the customer's wishes and the purpose of use - i.e. the specification of the raw sausage filling - and other important details such as dimensions, load capacity and temperature range etc. of the required smoking trolleys, corresponding sample smoke trolleys were first constructed and delivered for testing.
After testing the sample smoke trolleys, the decision was made not to use the H-shaped smoking trolleys known in the industry, as these only have a limited load-bearing capacity due to their conceptual design.
In addition, the customer's wish had to be taken into account that not only the standard salami sausages could be placed on 5 tiers, but also the 1,600 mm long sucuk stick goods as an alternative.
Due to the heavy weight and length of the sucuk sausage products, the final decision was made in favour of the robust Z-shaped smoking trolleys from Mohn, as these can also withstand a higher load. Wider notches in the supports for hygienic stainless steel round sticks (smoke sticks) were also taken into account in the concept for storing the Sucuk sausage products on the upper level of the smoke trolley, as the aim is to automate the loading of the smoke trolley in the future.
Another advantage of the Z-shaped smoke trolleys is that they can be pushed into each other to save space. After all, storage space costs money. The "normal" H-shaped smoke trolleys can be pushed into each other, but require more storage space. Due to their design, M-Form smoke trolleys do not have this option.
Thanks to the flexibility of the smoke trolley specialist Mohn, 39 Z-shaped smoke trolleys of the nine specifications were initially able to master their use in the running in-house process with a maturing and smoking chamber with flying colours.
Thanks to the optimal design of the Z-shaped smoking trolleys, it was possible to fit 39 smoking trolleys into the 4 smoking and maturing chambers with a floor space of around 40 square metres.
In total, the company Meemken opted for 156 Z-shaped smoking trolleys from Mohn, which were specially developed to meet their needs.
